I already eat way more vegetables than meat or carbs just like the author of this poignant Tumblr post suggest. At times, I thought I was being weird and ignored any funny looks from family and friends at mealtimes when I loaded my plate with veggies. I know how to plate most all of their meals; I do it with as little vegetables as I could possibly feel good about plating. Not one of them has ever asked for more vegetables (I am the only soul who has done so)! Ever!
Willowcrowned, the author of this Tumblr post, is recommending we eat more spinach than rice because it has more nutrients than rice!
I snapped the above image of todays lunch and posted it in this commentary; of which, I ate most of the asparagus; while my family had none! In their defense; however, I was the only person who ate! {{{SMILES}}} \(*@*)/ One person was gone and the other was fasting.
Guess what, I read this commentary to my daughter and son-in-law. This is what he said, "I like vegetables, Brussel sprouts (Huh, that's a no for me - I hate those little buggers!), stemmed carrots, creamed spinach, and other vegetables." My daughter also said she really likes Brussel sprouts (YUCK TWICE), asparagus, snap peas, spinach, and enamine beans!
Maybe since I told them what I was writing on, they'll make a bigger effort to eat more vegetables! Of course vegetables have to be cooked well but not over cooked. I promise to continue to serve them my best (vegetable-rich) dishes!
P.S., I came back to double check my grammar and spelling and pondered whether this commentary was missing something or not! I thought, "It needs to be meatier!" Hahahahaha!
